Pot O’ Gold Carrot Soup

Rich in flavor an easy and delicious way to warm the soul on a cold day.

3 Strips of Maple Shade Farm Bacon
3 Cups Chicken Broth
3 Cups of Sliced Carrots
½ small Onion
2 Tablespoons Brown Rice
¼ Teaspoon of Thyme

Directions

Pinch of Chopped Cilantro if desired
Fry the bacon in a saucepan keeping liquid and crumbling bacon setting it aside for later. Saute onions in the fat then add carrots stirring for 5 minutes. Add chicken broth rice and thyme, cooking with the carrots until tender. Add a pinch of cilantro for some zest if desired. Enjoy chunky or puree if desired for a creamy soup. Sprinkle with bacon crumbles. Enjoy!
